How to prepare a Lucknowi omelette

Lucknow, located in Utter Pradesh, is an old world city that is closely associated with nawabs and upper class culture. The culinary delights of the nawabs are well known. They enjoyed the regal and royal food. This particular dish takes its inspiration from the nawabs of Lucknow. Savor it like a culinary delight from India. In fact, it is an adaptation of the popular western fried eggs.

Requirements

Two large farm eggs. Use natural farm eggs in preference to commercially available eggs.

Four tablespoons of butter or cooking oil. I would prefer the latest soybean oil as it is good for the heart and lower cholesterol.

Two medium onions

two green chillies

A teaspoon of grated cashews and a few raisins.

Salt and pepper.

You will need two shallow skillets and, if possible, a double burner. Use one of the latest nonstick cookware available.

Process.

Crack the eggs into a shallow dish. Put two tablespoons of oil in the pan and heat it over medium heat.

Finely chop the onions and chilies. Mix them with the cashews and raisins and reserve.

After heating the oil, put the eggs in the pan and fry them carefully. Make sure the egg yolk is not fried.

In a separate pan put the remaining butter/oil and fry the chopped onion, green chillies and chestnuts with raisins.

Once the onion is slightly golden, turn off the heat. Continue raising the pan and evenly distribute the ingredients over the fried eggs. Use a wooden spatula for this purpose. Add salt and pepper to taste. You now have a Lucknowi omelette.

It is a simple and easy dish to prepare, especially if you have little time. Eat the dish prepared with white or brown bread or parotha (Indian bread). You will enjoy it. This is a plate for one person. If you are serving more people, stick with any number of eggs and selected ingredients in the same ratio. Serve it as a snack or for breakfast.
